So that the price is clear and does not scare people off with unclear figures. Honestly upfront: displaying the local currency increases clarity and trust, but the displayed currency is not yet the charging currency: the real rate and payment currency are determined by your payment provider/bank, and live conversion needs a rate source that must be maintained.

Currency localization is the display of prices in the currency familiar to the visitor (by country/language): we connect a rate source (a live rate feed or rates you fix), set up conversion, rounding and display format (symbol, digits), and the currency selection logic. Honestly about the key difference, this matters: DISPLAYING a price in the local currency and CHARGING in it are different things. You can almost always show €/$, but the currency the money is actually charged in depends on your payment provider: if it does not support multi-currency, the customer pays in the base currency, and their bank adds its own conversion and fee.
